400-500g artisanal cotechino. A very gelatinous pork sausage which require a long and gentle simmer. Traditionally served at midnight with a healthy serving of lentils which together are meant to bring luck for the new year ahead. However it is deliscious all year round also with some steamy polenta or some buttery mash.
